Santa's Favourite Banana Muffins

Preheat oven to 375 degrees
Grease muffin tins

Ingredients

3 large bananas (mashed)
3/4 cup white sugar
1 egg slightly beaten
1 teaspoon baking soda*
1 teaspoon baking powder*
1/2 teaspoon salt
1 1/2 cups of all purpose flour*
1/3 cup of melted butter (the secret is in melting the butter)
*sift flour, baking soda and baking powder together

Combine mashed bananas, sugar and slightly beaten egg together
Add melted butter and mix until blended
Add remaining sifted, dry ingredients and mix until moistened

Large muffins bake for 20 minutes
Small 12 muffin tins bake for 13 - 15 minutes
If toothpick comes out of middle of muffin clean - muffins are done
